BEAUMONT - This week was Crock-Pot week on 12News Daybreak and featured some of our staff's favorite crock pot recipes.
Italian Crock-Pot Chicken is our first meal of the week this week and was prepared by 12News Daybreak producer Kate Sauter.
Italian Crock- Pot Chicken
- 4-6 Boneless, skinless chicken breasts
- 1 can of cream of chicken soup
- 1/2 a stick of butter
- 1-2 packet(s) of dry Italian dressing mix
- 1, 8 oz. package of cream cheese at room temperature
Place chicken on bottom of the crock-pot and pour melted 1/2 stick of butter over the top.
Sprinkle Italian dressing mix on top of chicken and butter.
COOK ON HIGH FOR FOUR HOURS.
Mix room temperature cream cheese and soup in a bowl.
Once chicken is cooked, pour soup and cream cheese mix over the top.
COOK ON LOW FOR ONE HOUR
Add extras like seasoning or parmesan cheese before serving.
Serve alone or over pasta
Our Crock-Pot week recipe for Tuesday is a Chicken Tortilla Soup and was prepared by 12News Daybreak producer Brittany Stegent. It's perfect for enjoying with your family.
Chicken Tortilla Soup
- 4 chicken breasts
- 2, 15 oz. cans of black beans
- 2, 15 oz. cans of stewed tomatoes
- 1 cup of salsa
- 1, 4 oz. can jalapenos
- 1, 15 oz. can tomato sauce
Pour all ingredients directly over chicken in crock-pot
COOK ON LOW FOR EIGHT HOURS.
Enjoy with chips, cheese, sour cream or your favorite topping!
On Wednesday 12News Daybreak producer Kate Sauter made some "gooey cinnamon roll casserole."
Gooey Cinnamon Roll Casserole
- 2 cans of cinnamon rolls (any kind)
- 4 eggs
- 1/2 cup of milk
- 3 Tbsp maple syrup
- 2 tsp vanilla
- 1 tsp cinnamon
Cut cinnamon rolls into quarters.
Mix eggs, milk, syrup, vanilla and cinnamon in a bowl..
Place half the cut up cinnamon rolls on the bottom of your crock-pot
Pour egg mix over the top
Place remaining cinnamon rolls on top and cover with icing.
COOK ON LOW FOR 2.5 HOURS
NOTE: Times may vary for crock-pots, so check it every hour!
On Thursday 12News Daybreak producer Brittany Stegent made Texas Style Chili.
Texas Style Chili
- Ground beef
- 1 onion
- 2 jalapenos
- 2 cloves garlic
- 1 can diced tomatoes
- 1 can beans
- 1 can tomato sauce
- 2 tbsp chili powder
- 1 1/2 tsp cumin
- Salt & pepper
Brown ground beef
Add all ingredients in crock-pot and stir.
COOK ON HIGH FOR FOUR HOURS
On Friday, our last day of Crock-Pot week here on 12News Daybreak, producer Zac Clarke presented us with a pot roast.
- 1 chuck roast
- 1 onion
- Campbell's Slow Cooker Sauce for Pot Roast
Place roast on bottom of crock-pot
Chop vegetables and layer on top
Pour sauce on top
COOK ON HIGH FOR FIVE HOURS
